How to Make Vegan 3 Bean Chili and Carrot Cornbread Your Family Will Love

Because winter has been wintering much longer than necessary, go ahead and save this recipe for Vegan 3 Bean Chili and carrot cornbread⁠! I promise you'll thank me later!

This recipe is perfect for quick and easy weeknight dinners when you want something warm and filling that will last for a few days and won’t break the bank! It’s also great to batch prep ahead and add to your freezer stash for nights when you just “can’t even.”

The chili is packed with fiber for healthy digestion, folate for healthy cells, protein to help tummies feel full, iron for healthy blood and so many beneficial vitamins and minerals. The best part is that you can customize it to the tastes and preferences of you and your littles!⁠


VEGAN 3 BEAN CHILI AND CARROT CORNBREAD

Here's what you'll need 👇🏽:

1 Tbsp olive oil

1 yellow onion

2 carrots

1 yellow bell pepper

3 cloves garlic, minced

3 Tbsp chili powder*

1 tsp cumin

1 tsp chipotle powder*

1 15oz can black beans, drained & rinsed

1 15oz can kidney beans, drained & rinsed

1 15oz can pinto beans, drained & rinsed

1 28oz can diced tomatoes w/ juice

1 Tbsp unsweetened cocoa powder

1.5 Cups veggie broth

Salt and pepper, to taste

*If you do not prefer spicy foods make sure to get a mild chili & chipotle powder


Top with: Green onions, jalapeños, cilantro, sour cream, cheese, lime, avocado, or crushed tortilla chips!


Here's how to make the Vegan 3 Bean Chili:⁠
  1. In a large pot heat the oil over med heat and add the onion, bell pepper, and carrots. Sauté until the veggies start to soften (7-10mins)

  2. Add garlic, chili & chipotle powders, cumin and stir until fragrant (1-2mins)

  3. Add beans, tomatoes, veggie broth and cocoa powder. Stir until everything is combined. Season with salt and pepper to taste

  4. Bring the mixture to a boil then reduce heat and let it simmer for about 20-25 mins

  5. Remove from heat, let cool, serve, add fave toppings and enjoy!


How to Make the Carrot Cornbread:

I used a boxed cornbread mix and added 1 cup of shredded carrots to the batter and prepared the mix per the instructions on the box!

PRO TIP: If your little is still learning to enjoy mixed dishes you can start by serving the components separately or present the chili in a small bowl alongside other favorites, preferred, or well-accepted foods.
